There's a bit of prep work involved in these tacos - grilling the corn, roasting the cauliflower, and frying the beans - but it is all worth it. I just love how many delicious and healthy ingredients I can cram into one taco. Tacos really are the best.

A few days before we left for Hawaii, I did a fridge clean out, like I always do before we leave for a trip. aka. multiple stir fry's with weird combinations of vegetables for a week. There were a few other misc food items that I needed to use up - a bunch of chives, some Greek yogurt, two lemons, and a bag of potatoes.

This pasta is a mixture of my favorite winter vegetables - mushrooms, peppers, cauliflower, kale, and frozen corn. I use this combination in almost everything I make in the winter - quiche, scrambles, quesadillas. I combined my favorite vegetables, pasta, and two kinds of cheese. Topped with bread crumbs and baked until perfection!
Mushroom, Potato, and Barley Soup
I usually get the potato, mushrooms, kale and smoked gouda soup, which is a great combination of flavors. I tried to recreate his soup, to see if I could do it better, but as I was adding ingredients it took a different direction and I ended up with a mushroom, potato, and barley soup, which to be honest, turned out way better than I could have expected.

Focaccia with Rosemary and Grapes
Focaccia is one of the easiest bread to make. You can top it with a variety of ingredients, similar to a pizza. It's fun to play around with flavor combinations. Grape and rosemary are probably one of my favorite focaccia flavor combinations. The grapes mellow in their sweetness after baking and pair really well with the rosemary. Focaccia is best eaten the day of, when its' fresh out of the oven, warm, and soft!

The recipe that I am excited to share today is a creamy Roth Chipotle Havarti pasta with fried cauliflower, mushrooms, red pepper, and tomatoes. The kind folks at Roth Cheese sent me over some of their cheeses to try and I was particularly fond of their Chipotle Havarti.
