Winter Vegetable Breakfast Skillet

I wanted to create something wholesome and healthy for Ashley, and breakfast skillets are a great way to incorporate lots of delicious things into one meal. This winter vegetable skillet has potatoes, Brussel sprouts, mushrooms, orange peppers, eggs, cheese, and avocado. It is so easy to prepare, and is so insanely delicious!

Massaman curry paste is a mixture of different spices, lemongrass, peanuts, onions, and garlic - to name a few. Most of the ingredients are pretty common and easy to find, with the exception of lemongrass. If you can't find it, I think you could probably just leave it out and the recipe would still be delicious.

Bibimbap is probably one of the most well known Korean dishes. There are many variations of the dish, but I prefer mine with marinated salmon and veggies. To this dish, I added some steamed then fried broccoli rabe in soy sauce and olive oil and then sprinkled with sesame seeds, some fresh carrots, red pepper, avocado and green onions for garnish.

Sebastian is especially into these savory corn and cheddar waffles. They are fun and kid-friendly, but I also really like eating them myself, so it's a win-win for all of us. I usually make a large batch and then store them in the fridge and reheat over the course of a few days.

After my enthusiastic purchase of many tomatoes,  I decided to snack on the first pint while standing at my new kitchen island with some sliced aged cheddar and a 1/2 empty bottle of rose. Alright fine, there were chips as well. I used the second pint of cherry tomatoes in this delicious seared halloumi salad with fresh herbs.
