I was feeling an above-average level of confidence, so I decided to make some tater tots from scratch. I liked the idea of adding something green and healthy, something with a bold flavor. I opted for broccoli rabe because I really like the flavor and texture after a quick blanch and a saute in the frying pan with some salt and butter, and I thought the flavors would work so well.
Balsamic Strawberry Frozen Yogurt
For my first icy experiment, I decided to make a frozen yogurt (let's ease into it with something a bit healthier), particularly a balsamic strawberry frozen yogurt - which is one of my favorite flavors from my favorite ice cream shop here in Seattle.
Strawberry and Avocado Salsa
Lemon Ricotta Pancakes
Strawberry Rhubarb Tartlets with a Crumb Topping
Smoky BBQ Veggie Burgers from 'Minimalist Baker's Everyday Cooking'
Fried Potato and Scrambled Egg Breakfast Tacos with Tacolicious' Famous Orange Sauce
Tahini Citrus Salad with White Beans and Avocado
Roasted Cauliflower, Snap Pea, and Avocado Pasta with a Walnut Basil Pesto
Chocolate, Raspberry, and Hazelnut, Yogurt Parfaits
Lately, I've become completely obsessed with Chobani Flip Yogurt - especially the chocolate haze craze, which got me thinking (for all those people who don't have access to Chobani), why not make a version of my own chocolate yogurt, for my post workout fuel.
Valencian Paella
Dark Chocolate Banana Rye Muffins
Walnut and Cranberry Seedy Crackers
One of the ways in which I like to incorporate walnuts into my diet is via these super healthy high fiber seedy crackers. When I first moved to the west coast, I became absolutely obsessed with a cracker called raincoast crisps.
Vegetarian Pad Thai with Tofu
This pad thai recipe is a favorite of mine. It's a little sweet, a little salty, and a little tangy. The tofu is nice and crispy, the noodles cooked to perfection. I like to add a large serving of crunchy bean sprouts and cabbage to my plate and top it all with a sprinkle of peanuts and a squeeze of lime juice.
