One Pot Pasta with Tomatoes, Olives, and Capers
Savory Tomato Galette
I don’t usually like to bake or roast fresh garden tomatoes, but I had an intense craving for a savory cheesy tomato galette, so I bought a few pounds of fresh tomatoes, sliced them up, seasoned them with salt and layered them on the most buttery and flakey pastry dough. I added a thin layer of goat cheese under the sliced tomatoes, and them added additional Parmesan cheese in the crust.
Strawberry and Peach Salad
When peaches are in season, I try to use them in cooking wherever I can. They are so incredibly juicy and sweet during the summer months, I just can't help from buying a few pounds every week. I think the key to pulling off a salad with lots of fruit is by also adding some sort of cheese, a bold green, and an acidic dressing.

Raspberry Lemon Cheesecake Squares
Chewy Chocolate Fudge Pops with Brownie Bites
I am a 100% chocolate girl. Chocolate ice cream, chocolate cake, chocolate cheesecake - I always choose chocolate when ordering dessert. So naturally, I gravitated towards a chocolate popsicle for #popsicleweek
Raspberry Almond Streusel Tart
Israeli Couscous Salad
Cherry Tomato and Halloumi Salad with Fresh Herbs
After my enthusiastic purchase of many tomatoes, I decided to snack on the first pint while standing at my new kitchen island with some sliced aged cheddar and a 1/2 empty bottle of rose. Alright fine, there were chips as well. I used the second pint of cherry tomatoes in this delicious seared halloumi salad with fresh herbs.
Chocolate Dipped Ice Cream Sandwich Cookies
For this recipe, I wanted to change things up from my usual - chocolate chip cookie sandwich with vanilla ice cream. It's what I gravitate towards 9 out of 10 times at my local ice cream sandwich shop. I envisioned a soft chocolate sugar cookie paired with my favorite cookies and cream ice cream.
Balsamic Strawberry Frozen Yogurt
For my first icy experiment, I decided to make a frozen yogurt (let's ease into it with something a bit healthier), particularly a balsamic strawberry frozen yogurt - which is one of my favorite flavors from my favorite ice cream shop here in Seattle.

Strawberry Rhubarb Tartlets with a Crumb Topping
Vegetarian Taco Salad with a honey lime dressing
Fresh Berry Tart with Lemon Curd
The produce is so delicious right now, I thought I would spoil our house guests with a little taste of West Coast summer. If they don't eat all this tart, I am going to have to bring it to a friend's house and hope that it get's devoured then because if I keep it in our fridge, it's just too good to resist.
Seared Halloumi, Caramelized Peach, and Cherry Salad
Last Friday night, on one of the rare occasions that I actually left the house, I went out for dinner to my new favorite restaurant on Capitol Hill - Omega Ouzeri. The food is Greek with a Pacific Northwest flair.
Pound Cake with Summer Fruit and Whipped Cream
Triple Berry Crumble on the Grill
This crumble was so easy to make. Five minutes tops, minus the cooking time. All you do it cut up the fruit and place it right into the skillet. Mix up the topping in a small bowl, pile it on top of the fruit and then bake. You can even eat it right out of the skillet once cooked. I think I dirtied 3 dishes in the process.
